Tropical Twist Chicken Tenders

Ingredients

  • 1 lb chicken tenders
  • 1 cup shredded coconut
  • 1/2 cup almond meal
  • 2 eggs
  • 2 tbsp coconut oil
  • Salt and pepper to taste

Directions

  1.  Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2.  In one bowl, mix shredded coconut, almond meal, salt, and pepper.
  3.  In another bowl, beat eggs.
  4.  Dip each chicken tender in the egg, then coat it with the coconut-almond mixture.
  5.  Heat coconut oil in a skillet over medium-high heat.
  6.  Fry coated chicken tenders until golden brown on both sides, about 2-3 minutes per side.
  7.  Transfer browned chicken tenders to the prepared baking sheet.
  8.  Bake in the preheated oven for 10-12 minutes until fully cooked and crispy.
  9.  Serve hot and enjoy these simple and delicious tenders!
