Ingredients

  • 12oz pasta
  • 1/3 cup cashews
  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup pumpkin purée
  • 1 cup vegetable broth
  • 2 tbsp nutritional yeast
  • 1/4 tsp paprika
  • Salt/pepper

Directions

  1. Soak cashews in hot water 15min. Then drain and continue on with recipe
  2. Cook pasta according to package instructions
  3. Heat a saucepan over medium with olive oil. Add garlic and sauté until fragrant. Then add in onions and cook till lightly golden. Remove from heat and stir in pumpkin purée
  4. Add all ingredients to a blender and blend on high until smooth(about 1 min)
  5. Pour sauce over cooked pasta in saucepan over low heat. Toss till combined/heated through. Top with fresh cilantro + shredded cheese and enjoy!

Substitutes: you can use any type of pasta you’d like!
