  • 1 lb pork tenderloin
  • 2 tablespoons honey
  • 2 cups cherry tomatoes, halved
  • 1 small white onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Mixed salad greens
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. Season the pork tenderloin with salt and pepper, then brush it generously with honey.
  3. Place the pork tenderloin on a baking sheet lined with parchment paper and roast in the preheated oven for 20 minutes, or until cooked through and golden brown.
  4. While the pork is cooking, prepare the salad. In a large bowl, combine the cherry tomatoes, white onion slices, and mixed salad greens.
  5. In a small bowl, whisk together the olive oil and balsamic vinegar, salt, and pepper to make the vinaigrette.
  6. Once the pork is done, remove it from the oven and let it rest for a few minutes before slicing.
  7. Arrange the sliced pork tenderloin on a serving platter alongside the salad.
  8. Drizzle the salad with the prepared vinaigrette just before serving.
