Peanut Butter Berry Muffins

Ingredients

1 cup oats
2 cups of Milk
1 cup Yogurt
1/4 cup chia seeds
1 cup all-purpose flour (or a mix of whole wheat and all-purpose flour)
1/2 cup Maple Syrup 
1 tsp baking powder
1/2 tsp baking soda
1/2 cup melted butter or oil
2  large eggs
1 tsp vanilla extract
1/2 cup peanut butter (smooth or crunchy)
1/4 tsp salt
1 cup of your favourite berries

Directions

Overnight Oats

Pour your oats into a large reusable container.
Add in the milk and yoghurt and stir until well combined.
Place in the fridge overnight.

Muffins

Preheat your oven to 375°F (190°C).
Grease or line a muffin tin with paper liners.
In a large bowl, combine the overnight oats, chia seeds, maple syrup, and peanut butter.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Add the dry ingredients to the oats mixture, stirring until just combined.
In another bowl, whisk together the melted butter or oil, eggs, and vanilla extract. Add this mixture to the dry ingredients and mix until just combined. Do not overmix.
Fold in your chosen mix-ins (berries, nuts, chocolate chips, etc.).
Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the centre comes out clean.
Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
