Ingredients

  • 2 pounds of potatoes
  • 4 tablespoons unsalted butter, softened
  • 1/2 to 3/4 cup (120-180ml) warm milk or cream
  • Salt & Pepper, to taste
  • 2-3 green onions, finely chopped

Directions

  1. Peel the potatoes and cut them into evenly sized chunks. Rinse them thoroughly under cold water to remove excess starch.
  2. Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil over medium-high heat.
  3. Reduce the heat to medium-low and let the potatoes simmer until they are fork-tender, about 15-20 minutes.
  4. Once the potatoes are cooked, drain them in a colander and return them to the pot.
  5. Mash the potatoes using a potato masher or a fork until they are broken down.
  6. Add the softened butter to the mashed potatoes and mix until the butter is melted and well incorporated.
  7. Gradually pour in the warm milk or cream while continuing to mash the potatoes, adjusting the amount based on your desired consistency. The more milk/cream you add, the creamier the mashed potatoes will be.
  8. Season with salt and pepper to taste, mixing well.
  9. Serve the mashed potatoes warm. Sprinkle the finely chopped green onions as a garnish on top before serving
