Lemon Green Beans

  • 1lb green beans, trimmed
  • 2 tbsp Lemon juice, fresh
  • 1/3 cup Almond slices, raw
  • 3 tbsp Olive oil, divided
  • Salt and Pepper, to taste


  • Wash and trim your green beans.
  • Heat large skillet over medium heat, once hot add 1 tbsp olive oil.
  • Add your almond slices and toast until a light golden brown
  • Remove your almond slices and set aside while you cook your green beans
  • Add the remaining olive oil to pan and heat.
  • Once your oil is hot add your green beans, season with salt and pepper to taste and cook until your green beans are a bright green and are tender yet still crunchy, about 5 to 10 mins.
  • Once your green beans are cooked, squeeze your lemon juice over the beans and let cook through for about 30 seconds.
  • Turn off the heat and toss with your toasted almonds.
  • Serve immediately.
