Grilled Chicken Breast with Side Salad

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 6 cups arugula
  • 1 cup tomatoes, halved
  • 1 red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette


  1. Preheat your grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and season with garlic powder, paprika, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  4. While the chicken is grilling, prepare the side salad. In a large bowl, toss the arugula, tomatoes, and red onion with the balsamic vinaigrette.
  5. Once the chicken is cooked, let it rest for a few minutes, then slice.
  6. Serve the grilled chicken breast alongside the fresh salad.
