Ingredients

  • Ripe avocados (2)
  • Coconut milk (1 can, approximately 13.5 ounces)
  • 2 Broccoli

Directions

  1. Prepare Avocados: Peel and pit the avocados, then scoop the flesh into a blender with the broccoli.
  2. Blend: Add the entire can of coconut milk to the blender with the avocado. Blend until smooth and creamy.
  3. Chill (Optional): You can serve the soup chilled. If you prefer a colder soup, refrigerate it for at least 30 minutes before serving.
  4. Garnish (Optional): You can garnish with a sprig of mint, a drizzle of olive oil, or a pinch of black pepper for added flavor and presentation.
