  • 1 whole chicken (about 4 pounds)
  • 1 large potato, washed and cut into wedges
  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Preheat oven to 425°F (220°C).
  2. Pat chicken dry; season with salt and pepper.
  3. Toss potato wedges with olive oil, salt, and pepper.
  4. Mix olive oil and lemon zest; drizzle over chicken, ensuring even coating.
  5. Place chicken in a roasting pan; arrange potato wedges around it.
  6. Roast for 1 hour until chicken reaches 165°F (74°C) and potatoes are golden.
  7. Baste chicken halfway through roasting.
  8. Remove from oven; let chicken rest for 10-15 minutes.
  9. Garnish with fresh herbs if desired; serve with lemon wedges.
