Ingredients

  • 2 cups cherries – fresh or frozen, pitted

  • 2–3 tbsp honey (or maple syrup/agave; adjust to taste)

  • ½ cup water – or coconut water for a refreshing twist

  • 1–2 tsp lemon juice – optional, helps brighten the flavour

  • Pinch of salt – optional, enhances sweetness

Directions

1. Prepare the cherries

  • If using fresh cherries: wash, stem, and remove pits.

  • If using frozen cherries: let them thaw slightly so they blend more easily.

2. Blend

  • Add cherries, honey, water, lemon juice, and a pinch of salt to a blender.

  • Blend until completely smooth.

  • For a chunkier popsicle, pulse instead of blending fully.

3. Taste & Adjust

  • Taste the mixture — cherries can vary in sweetness.

  • Add more honey if needed, 1 tsp at a time, blending again briefly.

4. Fill the molds

  • Pour the mixture into popsicle molds, leaving about ½ cm at the top to allow for expansion while freezing.

  • Tap the mold gently on the counter to remove air bubbles.

5. Insert sticks

  • If your mold doesn’t hold sticks in place, freeze for 1 hour first, then insert sticks so they stay upright.

6. Freeze

  • Freeze for at least 4–6 hours, or overnight for best results.

7. Unmold & Serve

  • To release popsicles, run the mold under warm water for 5–10 seconds and gently pull them out.
