  • 8 small flour or corn tortillas
  • 1 lb chicken breast, diced
  • 1 cup pineapple chunks
  • 1 avocado, diced
  • 1 cup shredded lettuce
  • ¼ cup chopped cilantro
  • ¼ cup diced onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season diced chicken breast with salt and pepper to taste.
  3. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
  4. Warm tortillas in a separate skillet or in the microwave.
  5. Assemble tacos by placing a spoonful of cooked chicken onto each tortilla.
  6. Top with pineapple chunks, diced avocado, shredded lettuce, chopped cilantro, and diced onions.
  7. Add optional toppings such as salsa, sour cream, or a squeeze of lime juice.
