Ingredients
- 8 small flour or corn tortillas
- 1 lb chicken breast, diced
- 1 cup pineapple chunks
- 1 avocado, diced
- 1 cup shredded lettuce
- ¼ cup chopped cilantro
- ¼ cup diced onions
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions
- Heat olive oil in a large skillet over medium-high heat.
- Season diced chicken breast with salt and pepper to taste.
- Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Warm tortillas in a separate skillet or in the microwave.
- Assemble tacos by placing a spoonful of cooked chicken onto each tortilla.
- Top with pineapple chunks, diced avocado, shredded lettuce, chopped cilantro, and diced onions.
- Add optional toppings such as salsa, sour cream, or a squeeze of lime juice.
- Serve the Cha-Cha Chicken Tacos immediately and enjoy the lively flavours!
