BBQ Ribs with Chimichurri

Ingredients

  • For the BBQ Ribs:
    • 2 racks of pork ribs
    • 1/4 cup brown sugar
    • 1 tbsp paprika
    • 1 tbsp garlic powder
    • 1 tbsp onion powder
    • 1 tsp salt
    • 1 tsp black pepper
    • 1 cup BBQ sauce

    For the Chimichurri:

    • 1 cup fresh parsley, finely chopped
    • 1/2 cup fresh cilantro, finely chopped
    • 1/4 cup red wine vinegar
    • 3 garlic cloves, minced
    • 1/2 cup olive oil
    • 1 tsp red pepper flakes
    • Salt and pepper to taste

Directions

  1. Preheat your grill to 275°F (135°C). In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mix evenly over both sides of the ribs.
  2. Wrap the ribs in aluminum foil and place them on the grill. Cook for 1.5 hours. Remove the ribs from the foil and brush generously with BBQ sauce. Place the ribs back on the grill and cook for an additional 30 minutes, basting with BBQ sauce every 10 minutes.
  3. While the ribs are cooking, combine the parsley, cilantro, red wine vinegar, garlic, olive oil, red pepper flakes, salt, and pepper in a bowl. Mix well.
  4. Once the ribs are tender and caramelized, remove them from the grill and let them rest for a few minutes. Serve the ribs with a generous drizzle of chimichurri sauce and enjoy!
